Initially conceptualised as a specialty noodle shop which would have been called the Noodle Lab, Dillon was made to rethink his plans for his business at the last minute when the environment agency did not grant him license for cooking in their current venue. The Humble Loaf was birthed under such circumstances, the challenge being having to come up with a completely new menu with no cooking done over an open flame. The open kitchen concept with the bar counter seats has become very popular with customers who like to look at their sandwiches being put together.
 
The Humble Loaf serves up a good range of sandwiches, tartines and eggs, the hot favourites being Caramelized French Brie, Chorizo Iberico and Truffle chopped eggs with smoke caviar. Other interesting Chef’s creations worth mentioning are the items listed as Things on Toast, namely Bacon Jam, Pumpkin Kaya and French butter & Cinnamon sugar. To top the meal off, order yourself a slice of Mandarin flourless cake, Chocolate cinnamon roll or Flourless Chocolate cake and savour it with a cup of coffeeof your choice. Even the coffee here is done to perfection, certainly good enough to give any bonafide cafes a run for their money.

Everything is freshly baked by Dillon and his team daily. Weekday lunch sets start at SGD 10 and if you are tired of the sets, you have weekend specials to look forward to. The shop is tucked away in a corridor between the famous Donna Manis Confectionary and Katong Boneless Chicken Rice in the basement level of Katong Shopping Centre.
